Malt Bill

  • Lager malt – 3200g, 50.8%
  • Munich malt – 1500g, 23.8%
  • Vienna malt – 800g, 12.7%
  • Munich II malt – 800g, 12.7%

Mash

@ 67º C for 90 minutes

Hops

  • Hallertrau Traditional 7.4%AA, 35g
  • Hallertrau Mittelfraeh 4.6%AA, 10g

Hop Schedule

  • Start of boil for 75 minutes
  • Late hops added at flame out, steep/whirlpool for 20mins

Yeast

  • Saflager W-34/70, 2 pkts

Method

Start Fermentation at 9º C and allow to rise gently. Cold condition (lager) the beer for 3-4 weeks before bottling. This beer improves markedly with age.
